A firm summer favourite, tender meat kebabs and seasonal vegetables.
You will need:
2 chicken breasts
½ kilo of pork tenderloin
6 medium tomatoes
2 large red peppers
2 medium onions
4 green peppers
½ kilo mushrooms
How to prepare:
1.Cut up the chicken into bite sized pieces and leave to marinade in the fridge in a little olive oil, lemon juice and thyme for 2-3 hours, do the same with the pork.
2.After 2-3 hours, prepare the vegetables, wash and chop up into bite sized pieces as with the meat.
3.Begin making the kebabs, alternating the vegetables and the meat.
4.Cook on a bbq for about 20-30 minutes, turning frequently until the meat is cooked through and tender.
