These dishes were prepared by our good friends in Granada, the tapas capital of Spain. Thanks to them for introducing these dishes to me. I have since prepared them at home and they always go down a treat!

Barbecued Chinese Mushrooms

You will need: (serves 4-6)
1 kilo of chinese mushrooms
olive oil

How to cook:
1. Wash the mushrooms and cut in half if very large
2. Place the mushrooms on a grill or barbecue, drizzle with olive oil and sprinkle with a little salt
3. When one side is cooked, turn over and repeat the above.

Artichokes fried in olive oil

You will need:

1 kilo of artichokes

olive oil

How to cook:

1. Prepare the artichokes by peeling away all of the outer leaves until you are left with just the small pale centre.

2. Cut in half and fry for about 10-15 minutes with a little olive oil until they turn golden brown and begin to soften.
