Courgettes are in abundance at the moment in our small corner of Andalucia. We are lucky enough to have a fresh home grown supply, so needless to say, this recipe has been tried and tested many times - it is always a welcome addition to the table
You will need:
3-4 large courgettes
5 cloves of garlic
3 tablespoons olive oil
salt
How to cook:
1. Wash, top and tail and roughly peel the courgettes
2. Then slice as thinly as you can
3. Finely chop or crush the garlic
4. In a large frying pan, heat the olive oil and add the courgettes and garlic
5. Cook on a medium heat until the garlic and courgettes are soft - do not allow to brown
